Ingredients 125g self-raising flour
125g caster sugar 1/4 teaspoon bicarbonate of soda
125g (soft) unsalted butter 2 large free range eggs 1 1/2 tablespoon milk 7 cardamom pods' crushed seeds
Method
1. Sieve the sugar, flour and bicarbonate of soda together and then add the butter and eggs. Mix the ingredients on a low speed until combined, then put on to high speed for a minute. 2. Once it has had a minute keep mixing while slowly adding the milk and cardamom. Give it one last mix until smooth.
3. Put them into cupcake tins then pop them into the oven at 170 degrees for 22 mins. These cupcakes are amazing. Fluffy and delicious but the best thing is their flavour. Fragrance at its best. I used lemon buttercream for this recipe but you can use orange. I found this recipe dumbfounding, but the best thing about it is that it is super simple.
